Are bagels vegan?

Most plain bagels are vegan, but not all. Egg bagels contain egg, many US bagels use L-cysteine, and honey wheat, cheese, and some everything bagels include honey or dairy.

Why It's Confusing

Bagel dough varies by region. New York style bagels are typically lean (flour, water, salt, yeast, malt) and often vegan, while Montreal style bagels are sweeter and frequently include honey and egg.

"Egg bagel" is a category on its own and contains whole egg in the dough. It is visibly yellower but easy to mistake for a richer plain bagel.

Many supermarket bagels list L-cysteine as a dough conditioner. L-cysteine can be made from plant material, microbial fermentation, or animal sources such as duck feathers or human hair, and the source is rarely declared. Honey wheat and dairy-finished bagels add the usual honey and casein caveats.

Where It Commonly Appears

  • US and UK supermarket bakery aisles
  • Specialist bagel shops (New York, Montreal, London, Berlin)
  • Coffee chains (Starbucks, Pret, Caffè Nero)
  • Hotel breakfast buffets
  • Brunch menus and deli sandwich boards

It may also appear on labels as:

  • Egg, egg yolk, dried egg
  • Honey
  • Milk, butter, whey, lactose
  • L-cysteine, E920
  • Mono- and diglycerides of fatty acids

What To Watch For

  • Egg bagels and "challah bagels" always contain egg
  • Montreal style bagels are typically made with honey and egg
  • Honey wheat, cinnamon raisin, and "country" bagels often contain honey
  • Cheese, jalapeño-cheddar, and asiago bagels contain dairy
  • Everything bagels can be brushed with egg wash to hold the seed mix
  • L-cysteine on supermarket bagels is uncertain source, look for vegan-labelled lines [[3]](#source-3)
  • Gluten-free bagels are not automatically vegan, New York Bakery Co's gluten-free original bagels now contain egg [[4]](#source-4)

Vegan Alternatives

  • Plain, sesame, poppy, and most everything bagels from bagel shops that list ingredients
  • Supermarket lines explicitly labelled vegan, such as New York Bakery Co Original (wheat, water, sugar, yeast, salt, rapeseed) [[3]](#source-3)
  • Pair with plant cream cheese, hummus, avocado, or peanut butter rather than butter or dairy spreads
