Why It Is Confusing
Marzipan starts from a vegan-looking base: ground almonds and sugar. In many supermarket blocks and traditional sweets, that is all the core paste needs. The uncertainty starts when marzipan moves from plain paste into bakery, decoration, and chocolate formats.
Egg white is the main hidden issue. Some recipes use egg white or albumen to bind the paste or make decorative figures firmer. Egg is a declared allergen in the EU and US [[3]](#source-3), so packaged products usually make this visible, but bakery-counter items may not.
The outer layer matters too. Chocolate-coated marzipan may use milk chocolate. Glossy fruit-shaped marzipan can be coated with beeswax or shellac, both used as glazing agents in confectionery [[4]](#source-4). Premium versions may use honey rather than sugar syrup. The marzipan paste may be vegan while the finished product is not.
